A grout wedge is used to spread the grout across the tesserae. It is generally made of rubber or latex like flexible material (similar to a windscreen wiper) which easily glides across the surface of the mosaic pushing the grout down in between each piece of tesserae.

Grout wedges are very handy to have around as it means you don't have to use your fingers for most of the process and they can speed up the process immensely.
